Alcohol-free passion fruit rum sour with macaron

For those who found the last few baking recipes too elaborate but still need a sweet match, here's a pairing from the series: how simple is that! Alcohol-free rum sour with passion fruit plus a chocolate macaron. If there is no passion fruit syrup around, other flavors can be used. There goes pretty much everything that has fruit and acid. And if there is no macaron to be organized in a hurry, then a piece of brownie will do. The main thing is cocoa in the game. The clear and beautifully complex vanilla notes in Laori No.2 Rum, fit wonderfully with chocolate.The fruity acidity in the drink neutralizes and whets the appetite for the next bite. Drink, sleep, repeat! Without hangover, how simple is that!

The drink:

1/2 -1 lime depending on size

5 cl Laori No.2 or Fluère Dark Cane

3 cl passion fruit syrup e.g. from Bacanha

2 Dashes Fee Foam / Fee Brothers vegan alternative to egg white

3-4 ice cubes

Squeeze lime, add to a shaker with the remaining ingredients and shake vigorously for about 30-40 sec. so that foam can form and there is not too much ice breakage in the drink. Then add ice and shake again briefly (approx. 15 sec.) to cool the drink. Strain into the glass.
