The contrast between slightly bitter, mildly acidic coffee and sweet, caramelized bananas is a classic combination. Bacon and maple syrup elevate this pairing to a new level by adding a savory and smoky note that creates a harmonious balance. The salty and crispy texture of the bacon provides the perfect crunch.

Grilled Banana with Maple Bacon and Jalapeno Salsa

Servings: 4

Preparation Time: 20 minutes

Ingredients:

  • 4 slices of breakfast bacon

  • 1 to 2 teaspoons of maple syrup

  • 1 red bell pepper

  • 1 jalapeno chili pepper

  • 1 small red onion

  • Juice of half a lime

  • Salt, pepper

  • 5 tablespoons of olive oil

  • 2 bananas, not too ripe

Instructions:

  1. Preheat the oven to 220°C with the grill function on. Lay out the bacon slices on a baking sheet lined with parchment paper. Thinly brush each slice with maple syrup. Place the baking sheet on the second rack from the bottom in the oven and bake the bacon slices until they are golden brown and the maple syrup is caramelized. Depending on the thickness of the bacon slices and the oven temperature, this time can vary significantly (4 – 10 minutes). Make sure the bacon doesn’t burn.

  2. For the salsa, wash the bell pepper and jalapeno, remove the stems and seeds, and finely dice the flesh. Peel and finely dice the red onion. Mix them with lime juice, salt, pepper, and 3 tablespoons of olive oil. Adjust the seasoning to taste.

  3. Peel the bananas and halve them lengthwise. Place the halves with the cut side down on a well-heated grill or grill pan until grill marks appear.

  4. Arrange the banana halves on plates and top them with Jalapeno Salsa and a slice of bacon each.

Espresso Daiquiri

For one glass

  • 5 cl non-alcoholic rum, e.g., from Sober Spirits

  • 3 cl freshly squeezed lime juice

  • 3 cl coffee syrup (see below)

  1. Fill a shaker with ice cubes, add all the ingredients, and shake vigorously for 15 seconds.

  2. Strain the mixture into a cocktail glass using a fine mesh strainer and garnish with a lime zest.

For the Coffee Syrup:

Prepare this the day before

  1. Warm 200 ml of water with 200 g of sugar slightly and stir until the sugar dissolves. Stir in 50 g of coarsely ground coffee and let it steep for 24 hours.

  2. Strain the mixture through a coffee filter and refrigerate until ready to use.
