Sous Vide Strawberry and Cream Cheese - AF Vermouth Basil Sprizz

I like cream cheese in many different variations. Whether as a classic in a juicy American cheesecake, savoury with horseradish and salmon in a bagel or even as a slightly outdated Creamcheese Ball. Certain retro vibes are undeniable in the latter. But just like the stuffed mayo egg, there's something convincingly simple about oldies in a new constellation. If the party snack of tuna tartare and chevice might be slightly over the top, this dish is down-to-earth, affordable and definitely crowd-pleasing.
The cheese ball filled with parmesan, radish, mint and green pepper is a good accompaniment to sous-vide cooked rosemary strawberries. The mint in the cream cheese adds freshness, the green pepper quotes our retro vibes. And the juice that is created when the strawberries are cooked closed in a water bath gives an additional delicious topping. As a serving suggestion, a lightly toasted slice of brioche would be a more than worthy accompaniment. There is a double hit of fat here, but fat is a flavour carrier, so double the flavour!
For the drink, I recommend my favourite combination of non-alcoholic white vermouth and our latest creation of grape juice and verjus, Strictly Verjus. Strictly Verjus Sparkling Pink is a tart mixer made from the juice of unripe grapes. For this drink, I add some basil syrup to bring in the green flavour components, which in turn work well with mint, cream cheese and strawberry. By the way, Strictly Verjus can also be mixed very well with any other non-alcoholic alternative such as Amaro or Italian Bitter. But it is also uncomplicated, refreshing and light when served straight. The perfect summer drink.

Cream Cheese Ball
Ingredients:
300 g cream cheese / double cream level
50 g parmesan
2 radishes
8 - 10 mint leaves
1 tsp green pepper
a little brine of green pepper
salt
Chopped psutazia
Ground almonds
Method:
Wash the radishes and cut into very small sticks. Wash and finely chop the mint. Also finely chop the green pepper. Mix the cream cheese with the chopped ingredients. Add the Parmesan and season with salt and a little brine of the green pepper. Chill for at least 30 minutes. Then form small balls and turn them in the chopped pistachios and ground almonds.
Strawberries
Ingredients:
6 - 8 strawberries
2 sprigs rosemary / pressed to release the aroma
Method:
Wash the strawberries and put them in a bag. Add the rosemary. Vacuum seal and cook in a water bath at 65°C for 6-8 minutes. Leave to cool. Serve with the cream cheese. Top the balls with the juice of the cooked strawberries, if desired.
Drink:
Ingredients for 1 drink
5 CL non-alcoholic white vermouth
2 CL basil syrup
Basil Strawberry for Garnish
Ice / Wine glass
Method:
Fill the glass with ice. Pour in vermouth and basil syrup and stir. Top up with Strictly Verjus Sparkling Pink. Garnish with strawberry and basil.
