Strawberry Woodruff Cordial - Top Base

Let's call it what we want. In keeping with the season, we use a strawberry woodruff cordial as the base. A cordial differs from a syrup in that it contains less sugar. Our base has correspondingly more acidity. Fresh and very aromatic due to the woodruff. All you need is a little soda or tonic and the drink is ready. You can also pour it with non-alcoholic sparkling wine. If you like it a little more elaborate, mix it with a botanical, add some Feebrothers Cardamom Bitter and then top up with some soda.
Cordial:
500g strawberries
1.5 lemons juiced
300ml water
200g sugar
15 grams of woodruff / fresh and leave to wilt for 24.
Wash and chop the strawberries and bring to the boil with water, sugar and lemon juice. Simmer for 15 minutes. Then leave to cool. Wither the fresh woodruff and place in the cold strawberry juice for 24 hours. Then strain through a sieve.
The drink:
Ice cubes
10 cl Strawberry Cordial
5 CL EASIP Field
3 Dash Cardamom Bitter
Soda to top up.
Stir all ingredients with the ice cubes. Top with soda. Garnish with strawberry slices.
