The Pastis Spritz is shaken with sage

As a big pastis fan, I am more than thrilled with Ricard's Pacific. Convincing aniseed notes and aromatic herbs form all the typical characteristics of a pastis here. Except for the slightly heavy head the next day. I found a Pastis aperitif that is shaken with sage. So it made sense to pick up the sage again in the pairing. Aniseed and seafood are always a good combination, so saltimbocca of prawn.

The snack is very simple. Wrap the prawn first with a small sage leaf and then a strip of Parma ham. The size depends on the prawns you have available. Fix the ham and sage to the shrimp with a toothpick. Then slowly fry in olive oil.

For the drink, shake (freshly squeezed or bought) grapefruit juice 1:1 with pastis and sage leaves in a shaker on ice. Strain through a sieve into the glass of your choice. Now top up with a non-alcoholic sparkling wine.

Garnish with a grapefruit zest.

Quantity for one drink:

25 ml grapefruit juice

25 ml non-alcoholic pastis

60 ml non-alcoholic sparkling wine e.g.
