Alcoholfree vermouth cassis with chicken
My favourite summer drink, non-alcoholic and a delicous and easy starter.
Vermouth Cassis is a refreshing summer drink. Unfortunately, it's so tasty and drinkable that I'd better stick to the non-alcoholic version. Of course, the non-alcoholic martini doesn't have as much body as a Noilly Prat, but I don't have a head afterwards either. The cassis does a good job of counteracting the tart bitter notes of the Martini, while the lemon and soda make it summery. We stay in Italy and serve a bistecchine di polo in carpione with it. In other words, breaded chicken in vinegar. Vermouth and poultry go very well together. The dish tastes great cold, no wonder it is intended as a picnic. The acetic acid rounds off the bittersweet drink perfectly.
The drink:
For 200 ml
Ice cubes
40 ml Martini white non-alcoholic
15 ml cassis syrup
Squeeze of lemon juice
Lemon zest
Soda to top up
Fill the glass with ice and add all the ingredients except the soda. Stir with a bar spoon. Top up with soda.
Bistecchine di pollo in carpione:
1 chicken breast
2 eggs
100 g breadcrumbs
100 ml olive oil
1 light onion
1 stick of celery
2 garlic cloves
20 leaves fresh sage
1 sprig rosemary leaves
100 ml white wine vinegar
Cut the chicken breast into thin strips. Beat the eggs. Put the breadcrumbs in a bowl. Heat 50ml olive oil in a frying pan. Coat the meat in the egg, then in the breadcrumbs and fry in the hot oil until golden. Salt and place in an acid-proof bowl.
Chop the onions, celery, garlic, sage and rosemary. Lightly fry in the remaining 50ml olive oil until the onions are soft. Mix 50ml water and 100ml vinegar and pour over the vegetables, bring to the boil once and pour over the breaded chicken. Leave to cool and serve cold.
Serve with a blueberry on a skewer for a drink.
