In the heart of the Swiss Alps, more precisely in the majestic Grisons mountains, Jo Dunkel, a creative career changer, has redefined the concept of non-alcoholic distillates. Under the innovative "Edition Dunkel" label, he has sparked a small revolution in the world of spirits since 2020. Jo Dunkel's vision is to create an intense and adventurous drinking experience that does not rely on alcohol as a flavour carrier.
His creation, Lain & Füm, is a tribute to the wild forests of the Grisons mountains and their impressive botanical diversity. The name of the distillate, "Forest & Smoke" in Romansh, perfectly reflects the essence of the product. This creation consists of 13 carefully selected ingredients that come directly from the forest and its immediate surroundings. The centrepiece is juniper wood smoke, which gives Lain & Füm an unmistakable, slightly smoky aroma. And, for me, also gives it an unmistakable proximity to gin. I find it a more than worthy alternative to all non-alcoholic gin botanicals. Thanks to its impressive density of flavour, Jo's distillate stands up to mixing with tonic and acidic kombuchas.

The speciality of Lain & Füm lies in its natural production. Each distillate is only coarsely filtered, which gives it a characteristic, slightly cloudy appearance. Jo Dunkel attaches great importance to quality and sustainability, which is why only high-quality products from sustainable cultivation and certified wild harvesting are used.
Lain & Füm is not only a pleasure in its own right, but also offers a versatile base for cocktails and drinks. Thanks to its strong flavour, it can be used in a similar way to a traditional spirit to create perfect non-alcoholic drinks. Jo does not use any sugar, artificial flavourings or preservatives, which underlines the pure and authentic character of the distillate.
Jo is setting new standards in the world of non-alcoholic distillates. His product comes very close to a sensory journey through the wild, smoky forests of Switzerland - a real experience for the palate. The Newcomer of the Year award at Craft Spirits Berlin is therefore well deserved! Rock on Jo!
