Muri Nuala - 0,4% ABV

As already described in the last „Muri-Post“, the company Muri from Copenhagen was founded by Murra Paterson and Joakeim Goulidis in 2020 and is one of the most interesting representatives of the wine-proxy producers. In this new category of non-alcoholic (up to 0.5 %) drinks, the aim is not to imitate wines, champagnes or similar alcoholic drinks, but to create completely new taste images. Kombucha, kefir or kvass are often fermented and flavoured in several steps. Here, the producers are breaking new ground and you should be open-minded and willing to experiment with the flavours.

The back label on the bottle states the following: „Nuala is our cuveé of Fermenten blackcurrants, oak kombucha, chamomile kefir, fig leaf and pine kvass“ . Ok!

After opening, the typical acidic kombucha aromas rise to the nose. With a distinctly fruity berry note that soothes over the fermentation typical aroma. It is not uncommon for freshly escaping fermentation to be slightly discouraging at first, but not here. The colour is cloudy, as with many proxies. The drink has neither perlage nor mousse, and the drinking sensation is very close to that of red wine, for example. Which is also the intention of the producers. As with Passings Clouds, there is not only a typical kefir acidity, but also a slight spiciness. In addition, there is plenty of fruit, which, as already mentioned, is more in the berry spectrum. The bitter notes are also very pleasant and balanced. The use of oak chips comes through very well here. Nuala von Muri is ideally suited for food pairing and as a menu accompaniment. The peaks of spiciness and bitterness are noticeable, but remain pleasantly in the background.

Served at room temperature, the Proxy is a good companion for heavier dishes and strong roasted flavours. Chilled, Nuala is also suitable as an accompaniment to salad or even ceviche. I recommend the following life tatsing on null-prozente.ch (thank you Bo and best regards to Switzerland).

Since I don't tolerate so much fermented food, I accompany max. 2 courses with Proxies. With a bottle price of about 20 €, it's a drink for special occasions, but definitely worth it!
